Biokosso
A dish from Côte d’Ivoire

Ingredients (serving 5)

5 small-to-mid size fresh fish
-
1 pound eggplant
-
1 large onion
-
2 tablespoon oil
-
3 fresh tomatoes
-
fine salt
-
2 Maggi cubes
-
1 cup water
-
1⁄2 teaspoon ground pepper
Method
-
Cut and boil eggplant and tomatoes for 15 minutes

Add 1⁄2 cup water and blend
-
In a skillet brown chopped onion in oil
-
Add blended mixture and Maggi cubes
-
Season with salt and ground pepper
-
Season fish and wrap in fresh green leaves (or aluminum foil) and grill on charcoal
-
Add fish to mixture, Check seasoning
Serve with rice
